Crossfield Farmers Market 4th Annual Long Table Dinner
The Crossfield Farmers Market is hosting our Fourth LONG TABLE DINNER in Celebration of our 50th Anniversary and Alberta Local Food week!

As an Alberta Open Farm Days event we will finish off the week by hosting an amazing culinary experience August 16/25 featuring several Crossfield Farmers Market Vendors.

We have TWO Food Network Champion Chefs preparing your meal, Chef Marc Swiednicki and Chef Bo Hons using local Alberta food; farm to table and made fresh for you.

Marc Swiednicki, the culinary world knows me as The Viking Chef. I'm a Montreal born Chef with an unconventional path.
Cooking has always been my first love, when I worked my first job behind the grill at a Mexican restaurant and got my first taste of the culinary world.
At 19, I went to the Cordon Bleu cooking school in Ottawa and graduated top of my class and while apprenticing under Moisha Smith at the Minto Place Hotel in the shadow of the Parliament buildings in Ottawa, where my regular guests were Brian Mulroney and his family.
Since then, I have gone on to cook and collaborate with some of Canada's Top Chefs and internationally known Chefs i.e. Charles Antoine Crete, Danny Smiles, Mitch Laughren, Laurent Daganais to name a few.
I have also made appearances on the Food Network '' Wall of Chefs'' tv show and won, which led to being Featured in Canada Food and drink magazine, and other TV shows which I can't disclose yet, and a very special collaboration with Eric of Township27 featuring my own spice line.
My cooking influences go from French cuisine to Mexican to infusing international flavours using my formal traditional French training.
Flavours and sustainable ingredients are at the heart of my cooking with love and passion to share with my guests as I now make my mark in Vancouver, B.C. as my home.
The Viking Chef, Chef Marc Swiednicki

Bo Hons, better known as the "Cake Chef," is a distinguished pastry artist whose culinary expertise has been shaped by a fusion of nuevo Latino and American cuisine, complemented by classical French cooking and pastry techniques. A graduate of Baltimore International Culinary University (1997), Bo embarked on his journey through various professional kitchens, refining his skills before joining the Sheraton Corp, where he quickly climbed the ranks. His tenure with Club Med Resorts further expanded his culinary horizons, taking him across Florida and the Caribbean in leadership roles.
In 2005, Bo relocated to Canada, where he briefly worked with the Sheraton in Calgary before pursuing his entrepreneurial dream: launching Wolfbay Café, a virtual custom cake and pastry shop. His artistic approach to baking and pastry design quickly garnered attention, leading him to national recognition. In 2019, Bo solidified his place among elite pastry chefs when he won his episode on Season 1 of The Big Bake – Holiday on Food Network.
Passionate about sharing his craft, Bo has taught numerous classes on edible cake airbrushing, helping aspiring bakers hone their skills. His dedication has earned him multiple awards, including first place in various cake competitions including the Calgary Stampede, as well as features in esteemed culinary publications worldwide.
With a commitment to innovation, artistry, and education, Bo Hons continues to inspire the baking community, proving that pastry is not just a craft—it’s an art.

Long Table Dinner Tickets are $130 per guest and includes appetizers, salad, main course, wine and gorgeous Flowers from Petal and Pollen with a cash bar option as well.
