As the chef at The Butchers Tap I would really like to share my homestyle cooking and the incredible flavours of my Childhood in West Africa. West African cuisine is characterised by its bold flavours, hearty portions, and vibrant colours and is the starting point of so many cuisines Southern American, Caribbean, Brazilian etc etc . Because it is food that celebrates abundance and communal joy, with rich stews simmering for hours, smoky grilled meats charring over open flames, and tasty staples providing satisfying sustenance.
