Celebrate the beauty of simplicity — the Tuscan way. In this hands-on class with food writer and chef instructor Shawnie Kelley, we explore Cucina Povera — the “peasant kitchen” — a deeply rooted philosophy that transforms humble ingredients into unforgettable dishes. This is food born from scarcity, perfected by creativity, and passed down through generations with love. Through classic recipes and time-honored techniques, you’ll learn how to cook with intention and coax incredible flavor from the most rustic ingredients. This is a class that feeds more than just your stomach — it connects you to a way of cooking and living where nothing is wasted, and everything has meaning.
On the Menu:
Ribollita – A hearty, earthy soup of slow-cooked cannellini beans, kale, vegetables, and day-old bread — simmered until deeply flavorful and rich.
Pici all’Aglione – Hand-rolled, thick Tuscan pasta dressed in a bold sauce of garlic, tomato, and olive oil — simple, satisfying, and pure.
Olive Oil Cake with Rosemary & Citrus – A rustic dessert that’s deeply moist and fragrant, made with local olive oil, orange zest, and a hint of rosemary.
Nuts and other common food allergens are frequently used in our kitchens. If you have a food allergy or dietary restriction, please contact us as soon as possible before class. We will make every effort to accommodate your needs; however, adjustments cannot be made during the class.
If you need to cancel your class booking, you may do so up to 48 hours before the class to receive a refund or class credit.
If The Mix must cancel a class, you will be notified immediately by phone or email and given the option to switch to another class of equal value or receive a full refund.

Refunds will not be issued after a class has been held.
