Seared Diver Scallop
Perfectly seared diver scallop over a silky apple–parsnip purée, finished with a balsamic glaze and micro herbs.
First Course – Choice of:
Winter Spinach Salad
Baby spinach with candied pecans, shaved red onion, and goat cheese snow, dressed with warm cranberry vinaigrette.
OR
Oyster Mushroom Cappuccino
Oyster mushroom and Chardonnay soup topped with truffle–Parmesan foam, presented in a cappuccino-style finish.
Entrée:
Lobster Tail Wellington
An 8 oz Maine lobster tail wrapped in oyster mushroom duxelle and spinach, baked in golden puff pastry. Served with a Champagne cream sauce and charred asparagus.
Dessert:
Champagne Strawberry Shortcake
Champagne-soaked sponge cake layered with macerated strawberries, whipped mascarpone cream, and buttery shortbread crumble.
