CICCHETTI ALLA VENETA (A selection of traditional Venetian small bites)
  • Polenta fritta, baccalà mantecato, olive taggiasche

About Chef Franco Doretto

Chef Franco Doretto’s culinary journey began in Jesolo, Italy, where he worked as a commis chef and apprentice from 1986 to 1990. With dedication and passion, he rose through the ranks to become Head Chef, building a career that spans prestigious kitchens across Italy and the UK. His experience includes nine years at a Michelin-starred restaurant in Cortina d’Ampezzo, as well as roles in luxury hotels, private members' clubs, and his own bakery and delicatessen in Brescia, which he ran for eight years.

Known for his commitment to fresh ingredients, quality, and innovation, Franco brings deep expertise not only in cooking but also in kitchen leadership, menu development, and staff training. In 2021, he opened Bardo St. James as Head Chef, and now serves as Executive Chef at Eataly Boston, overseeing all kitchen operations and continuing to inspire through his refined, creative approach to Italian cuisine.

Outside the kitchen, Franco is a passionate cyclist, finding a natural synergy between the focus and discipline required in both cooking and cycling.

For groups of up to 4 guests, a minimum of 4 days' notice (class day not included) is required to receive a credit in the form of a coupon code for a future class or event at La Scuola. We reserve the right to reschedule or cancel a class or event due to unforeseen circumstances, inclement weather or otherwise. In the event of a class or event cancellation, we will contact you directly at the phone number or email address you have provided to offer a full refund or credit to transfer to a future class or event.
