The next feature in our Chef’s Table series is a true testament to resilience, passion, and the idea that it’s never too late to follow your calling. We are proud to spotlight Chef Jim Trent, whose story is as heartfelt as the dishes he creates.
Growing up as one of ten children in Southern Maryland, Jim’s love of food began early, watching and helping his mother in the kitchen as she lovingly cooked for a full house. Though his first career was far from the culinary world—30 years in roofing and construction—his appreciation for food and the joy of feeding others never left him.
After a series of injuries and a life-changing move to Illinois, Jim’s wife encouraged him to pursue the passion that had been quietly simmering for decades. He enrolled in Joliet Junior College, where he trained under chefs from the American Culinary Federation, graduating with High Honors in 2015. That experience sparked a new career and ignited a drive for excellence that continues to this day.
Since joining the Omni Bedford Springs culinary team in 2016, Chef Jim has grown through every station and found his home in Banquets, where his talent truly shines. Known for his mastery of soups and sauces, he brings warmth, depth, and balance to every dish—often with a dash of brightness from his favorite ingredient: lemon juice.
In May 2022, Jim achieved his Certified Sous Chef designation after passing a rigorous practical exam, a milestone he once never imagined possible. His philosophy is simple but powerful: freshness, quality, and craftsmanship in every creation.
At his Chef’s Table, guests can expect deeply satisfying dishes crafted with care and heart—rooted in tradition, refined by skill, and elevated by the joy of a chef who truly loves what he does.
