Gary Foulkes is a distinguished British chef celebrated for his expertise in Michelin-starred dining and his globally inspired, seasonally driven cuisine.
With over two decades of experience in some of the UK’s most prestigious kitchens, he has built a reputation for precision, innovation and an unwavering commitment to high-quality ingredients.
Foulkes began his culinary journey at The Chester Grosvenor in Cheshire before honing his skills under esteemed chefs such as Gary Rhodes, Richard Neat (**), William Drabble (*), John Campbell (**) and finally Phil Howard (**) at the multiple Michelin starred restaurant , The Square in Mayfair, where he rose to the position of head chef in one of the most respected fine-dining institutions in the country.
In 2016, Foulkes took the helm as Executive Head Chef at Angler, a Michelin-starred seafood restaurant in London. Under his leadership, Angler retained its Michelin star up to and including the 2025 Michelin guide, receiving critical acclaim for its innovative, seasonally driven seafood dishes inspired by his global travels.
In July 2024, Foulkes launched Cornus, his latest venture in London's prestigious Belgravia district. Within its first year, Cornus was awarded a Michelin star and entered the top 100 restaurants in the UK list at the Restaurant awards, a testament to Foulkes’s refined approach to modern fine dining. His culinary philosophy continues to emphasise the use of the finest seasonal ingredients, expertly crafted into visually striking and deeply flavourful dishes.
