Wild Garlic Charred South Coast Fish, Charred Heritage Tomatoes, Sexy Samba Sauce

Delicately charred fish infused with the ‘vibrant’ punch of wild garlic, paired with sweetly smoked heritage tomatoes. A vibrant “sexy samba sauce” ties everything together, adding a lively kick to this light yet flavour-packed opener.

Spiced Wild Wood Pigeon in Mango Chutney Butter Glaze, Malai Palak–Style Creamed Greens, Crispy Naan

Succulent wood pigeon seasoned with warm spices and lacquered in a buttery mango chutney glaze. Served over velvety creamed greens inspired by malai palak and finished with crispy naan for the perfect textural contrast.

Raspberry & Wild Sorrel Sorbet

A refreshing palate cleanser bursting with bright raspberry flavours and the subtle tang of wild sorrel—an invigorating interlude that resets your taste buds.

Rosemary Seared Southdown’s Venison with Charcoal Butter, Honeyed Carrot, Brighton Blue Cheese Sauce, Rocket

Tender Southdown’s venison seared with fragrant rosemary, enhanced by smoky charcoal butter. Served alongside sweet honey-glazed carrots, rich Brighton blue cheese sauce, and peppery rocket leaves for a delightful balance of flavours.

Montezuma Dark Chocolate, Date Caramel & Smoky Peanut Tart, Charred Seasonal Fruit, Maple Cream

A decadent dark chocolate tart layered with luscious date caramel and smoky peanuts, crowned with charred seasonal fruit. A drizzle of maple cream adds a smooth, sweet finish to this indulgent finale.
