Join Chef Tomo for the final chapter of the 4-step Digestive Wellness Journey, where Japanese washoku meets molecular nutrition.
Enjoy a 50-minute Gut Healing talk, a hands-on cooking class, and a shared dinner — all designed to help you repair and reinoculate your gut from the inside out.
💡 It’s recommended to attend this class after taking Steps 1 & 2, as it helps deepen your understanding of the full digestive wellness process.
However, you’re also welcome to join this session first — it works perfectly well on its own too.
This session covers Steps 3 & 4 of our 4-step program:

4️⃣ Reinoculate 🌿 Rebuild your gut ecosystem with beneficial bacteria and prebiotic fibers, bringing back harmony, balance, and resilience.
🔬 Before we cook, Tomo will share the molecular nutrition insights behind these two steps — so you’ll understand exactly how food repairs and restores your microbiome.

🍗 Main|Koji Chicken Schnitzel
Chicken breast marinated in shio-koji, coated with rice flour and GF breadcrumbs, and pan-fried to golden perfection.
Crispy outside, tender inside — finished with a squeeze of lemon 🍋

🥣 Soup|Chicken Bone Broth Tonjiru (with Konnyaku)
Slow-simmered chicken bone broth with pork, daikon, carrot, konnyaku, and zucchini — finished with miso.

🥗 Side 1|Lemon Sesame Okra
Fresh okra tossed with white sesame, tamari, and lemon juice — rich in mucin and vitamin E.

Julienned daikon and carrot with shio-koji, apple cider vinegar, maple syrup, and shiso.

🍚 Rice|Pink Ginger Quinoa Rice
Steamed rice mixed with quinoa, red pickled ginger, and lemon-marinated purple cabbage.
Topped with lemon zest and olive oil for colour and detox flair.

🍵 Drink|Okra Water Detox Drink
Okra soaked overnight and served with lemon or a pinch of salt.
