Saison’s Greetings

This fall, we were excited to welcome Sean Burke to our brew team! You may be familiar with his work in the world of saison and mixed-culture beer at The Commons and Von Ebert. We let that creativity and expertise loose for some saisons here at Vice!

The first saison was also Paul Linthacum’s first go on the brew deck. With Sean, together they developed an easy-drinking French-style table saison that we tapped a few weeks ago. It’s fruity, clove-y and delicious!

Then, we harvested yeast from the first saison for Sean to brew a dry-hopped saison with Mt. Hood and Quantum Mosaic hops. This new beer releases Dec. 5 for this event!

Finally, we have the last of a series of four Brett Saisons originally brewed as the first beers on Barlow’s Brewery’s system before this building was ever Vice Beer. Then brewers Eric Van Tassel & Bryan Hochrine (now at Brothers Cascadia) pitched a different Brett-focused yeast strain into 4 different kegs to condition for 5 years. This is the last of those 4 kegs - the final of a series we dug out of the ground like a time capsule and called “Encino Man.” We will tap this for the event on the 5th!

Drop in all weekend for a flight or a full pour of all 3 side-by-side-by-side and dive into saisons! After all, “‘Tis The Saison!”
