On Wednesday, March 11, join us at Sabira for an evening that explores the quiet science behind great wine. This intimate dinner features five Sequum wines, each paired with a thoughtfully prepared course designed to bring out the best in every glass. Winemaker Dr. Paul Skinner, whose background spans viticulture and soil science, approaches winemaking from the ground up… literally. His wines reflect a deep understanding of how soil, climate, and time shape the character of a vineyard. Throughout the evening, guests will have the opportunity to connect with Dr. Skinner, ask questions, and hear firsthand how his work in the vineyard translates to what’s in the glass.
