Chef Gary Shelly grew up on a cattle ranch in Northern California, where he learned early on the value of hard work, seasonality, and respect for where food comes from. That upbringing shaped the way he cooks—rooted in the land, ingredient-driven, and grounded in a deep sense of purpose.
Gary spent 18 years cooking his way through the San Francisco Bay Area, working in some of the region’s most respected kitchens. He got his start at just 18 with an apprenticeship under Mark Sullivan at The Village Pub in Woodside, where he learned the fundamentals of technique, discipline, and leadership that would shape the rest of his career. Mark also set him up with stages at other Michelin-starred restaurants throughout the Bay, giving Gary a broad, hands-on education in fine dining at a high level. Over time, he stepped into leadership roles—running kitchens, mentoring cooks, and helping shape thoughtful, ingredient-driven menus. After his time in the Bay, he headed east for a stage with Patrick O’Connell at the renowned Inn at Little Washington, followed by a season with Areté Hospitality in Miami—experiences that expanded his perspective but ultimately confirmed that his heart—and his cooking—belong on the West Coast.
Soon after, Gary set down roots in Central Oregon, where he’s become an active part of the region’s growing food scene—leading kitchens in Bend and Sisters, and building strong relationships with local farmers, winemakers, and purveyors. The transition has sharpened his focus on seasonality, sourcing, and hospitality with intention. His cooking today reflects both where he’s been and the insight he’s gained along the way—thoughtful, grounded, and closely tied to the people and places that shape each experience.
He is the founder of Stoked Supper Club, an intimate pop-up dinner series that brings multi-course tasting menus to unique venues across Central Oregon, and Smoked Oak Hospitality, a creative platform focused on collaborative events, private dining, and future brick-and-mortar concepts. As a featured guest chef at Faith, Hope & Charity Vineyards, Gary will present a one-night-only menu that celebrates the season, the wines, and the high desert landscape that brings it all together.
More than just a supper club, Stoked is an experience—an intimate gathering where food tells the story, and every meal is an opportunity to connect. Through multi-course tasting menus, private dinners, and curated events, guests are invited to explore new flavors in a warm, welcoming atmosphere.
