Scallop season is almost here. As Rye Bay Scallop Festival approaches, we’re hosting two scallop masterclasses at Tillingham with Fish Union co-founder and chef Richard Kirkwood.
Evenings built around a live cookery demo and a four-course scallop menu celebrating the bay at its best. A chance to watch, learn, ask questions, then sit down and eat well. Sussex wines alongside, if you fancy.
Masterclasses will take place upstairs in our restaurant on 19th and 28th February, with the evenings beginning at 7pm.
The menu:
Scallop crudo, truffle oil
Scallop ‘dog’, jalapeño mayonnaise
Scallop mousseline potato, pink peppercorn sauce
Scallop, crispy pork belly, sauce diable
Tickets are £55 and include the full four-course menu and demonstration. An optional wine flight is available on the night. We’d love you to join us.
