Pack your appetite and a pinch of wanderlust—Chef Pascal is whisking you away to the south of France without leaving the kitchen! In this hands-on cooking class, you’ll discover the magic of bouillabaisse, the legendary fisherman’s stew that turns the day’s catch into a feast.

With Chef Pascal (authentically French and fabulously fun -- just ask our summer campers!) as your guide, you’ll chop, stir, and simmer your way through layers of flavor—fresh seafood, garden fresh jersey tomatoes, fennel, saffron, and hand-picked herbs that sing of summer. Along the way, he’ll sprinkle in French cooking secrets and plenty of joie de vivre.
The grand finale? Gathering around the community table to savor your bouillabaisse masterpiece—proof that the best way to celebrate the end of summer is with a spoon, a smile, and a taste of the sea.
All participants are welcome at all cooking levels.
Dietary restrictions can be accommodated if communicated in advance.
You are welcome to bring your own wine, beer or sprits. Sparkling and still water will be served.

About Chef Pascal Beric:
With over 40 years of professional experience in teaching, creating, and designing within the cooking and restaurant industries, Chef Pascal possess an in-depth knowledge of both French and American cuisines. As a culinary educator, Chef Pascal worked closely with Deans and culinary students at the prestigious French Culinary Institute in New York. He excels in training, supervising, and motivating kitchen staff to ensure smooth operations. Chef also had the honor of leading a Charcuterie course at the James Beard Foundation Gala Dinner & Auction. He is currently a lead instructor of culinary arts for teenagers at a Paterson High School in New Jersey.
How did Chef Pascal find his way to HealthBarn? As luck would have it, he lives just around the corner! When he discovered HealthBarn’s mission—and saw that kids were learning to cook, garden, and eat healthy—it sparked his curiosity. He reached out to Stacey, our founder, and after one lively meeting (no butter, lots of garden-to-table goodness, and plenty of kids!), he was all in for the challenge.
Since then, Chef Pascal has inspired hundreds of campers to roll up their sleeves, taste fresh flavors, and fall in love with homemade meals. He’s elevated our culinary camp experience to a whole new level of delicious.
So what’s next? He’s turning up the heat for the grown-ups! Chef Pascal is cooking up culinary classes just for adults—think foodie adventures with French flair, fresh ingredients, and a whole lot of fun. If you’ve been watching the kids have all the fun in the kitchen, now it’s your turn to grab an apron and join the feast.
