Weekend of Lambic
We're feeling spontaneous! It's time to unearth the treasures of the cellar for a Weekend of Lambic. This tart happening will begin at Noon on Saturday, October 25, 2025 and carry on until the kegs are tapped out and every bottle emptied.

Cantillon V Generations collaboration with Monk’s Café 2022

Created to celebrate Monk’s 25th Anniversary in 2022. Exclusive to Monk’s. This special Gueuze was created by 5 generations of the Cantillon/Van Roy family and my family (my daughter Isabel assisted in this blend). A unique blend of 4yr old, 3yr old and 2yr old barrel-aged lambics. Soft, pillowy carbonation. Cantillon house character with a bit more oak notes, citrus and a bit of stone fruit (it’s not fruited) in the aroma and taste. 6%abv


Cantillon Gueuze 2024

A blend of lambic from three different seasons. That generally means that Jean uses a three-year-old lambic, a two-year-old lambic, and a fresher, one-year-old lambic. That one-year old can be as young as eight or nine months. This is still my favorite go-to lambic from any producer. It is so well balanced – attributable to Jean’s amazing ability to blend these nuanced lambics into something so drinkable. Cantillon’s goal has always been to blend for harmony of flavor. Each batch is slightly different – which is how a Gueuze has been for over a century. 5.5%abv


Cantillon Kriek 2025

A traditional kriek made by adding organic Turkish Morello sour cherries at the rate of 200 grams per liter. Maceration in stainless steel tanks for about two months. Then blended with young Lambic for a secondary fermentation in the bottles/kegs. 6%abv


Cantillon Magic Lambic 2025

Brewed to raise funds for The Magic Land Theater in Schaerbeek, Belgium. This is a blend of 80% Lou Pepe Framboise and 20% blueberry Lambic. Jean added vanilla to this blend. Very limited production. 5.5%abv


Cantillon Nath 2024

Lambic refermented with rhubarb. This was first made as the Zwanze 2008 and perfected with Jean’s Zwanze 2012. The 2012 iteration was Jean’s wife Nathalie’s favorite Lambic. Naturally, Jean started making that on a regular basis starting in 2017 and the Lamibc was named as an homage to his wife. The drawings on the bottle labels were created by Nathalie’s kindergarten school students. A new drawing for each vintage.


Cantillon Rose de Gambrinus 2025

whole raspberries are soaked for 2-3 months with lambic that is on average 20 months old. After maceration, the fruited lambic is blended with one year old lambic, which provides the sugars for secondary fermentation in the bottle. 5.5%abv


Cantillon Sang Bleu 2025

Blend of lambics with blue honeysuckle berries, also known as haskap berries. These berries are slightly sweet with a beautiful, balanced acidity. This blue fruit makes a blood-red beer: Sang Bleu. 6%abv


Cantillon St Gilliose 2025

A blend of all 2-year-old lambic that is dry hopped and refermented in the keg. Originally named Cuvée des Champions and brewed in honor of the Van Roy family’s main football club Royale Union Saint-Gilloise. 5.5%abv


Cantillon St. Lamvinus 2024

When first introduced this was a blend of organic merlot and cabernet franc grapes, but recent vintages use solely merlot grapes. As with the Vigneronne, the stemless grapes are added whole to a stainless steel tank for 4 to 8 weeks. 7%abv


Kestemont 1 Year Lambic

Located in once brewery-rich Dilbeek on the site of Brewery Goossens. The land was purchased and renovated by the Kestemont family in 2016 who have returned traditional Lambik making to the town of Pede. This straight, virtually uncarbonated lambik is the base for all their beers. Aged in oak for 1 years before kegging. 6%abv


Kestemont 4 Year Lambic

This straight, virtually uncarbonated lambik is the base for all their beers. Aged in oak for 4 years before kegging in 2023. 6%abv


Boon Geuze 2025

Lambic from specific foeders selected and blended to best produce a “keg conditioned” geuze. Full bodied with signature sourness and low carbonation. Frank Boon makes consistent lambic. 6.3%abv
