Una has been in hospitality for over 35 years, and for 25 of those years, the baking of delicious scones escaped her, as it was her mum's department and she was just perfect at it, and she is a firm believer, if it is not broken don't fix it!! Una then had to wait until "Mum" retired until she could take over the " scone baking role" - and it wasn't as straight forward as she had hoped - it took a few tries to get it right - so now she feels she may not be on her own and there may also be a few other lost souls out there trying to capture the magic of baking scones, as they really do taste a little of bit of heaven especially when they are just out of the oven and you can't stop yourself from spreading a little bit of Irish butter and delicious preserve on top - heavenly but oh so simple! So she now has many delicious recipes for different scones , as there was no stopping her once she got started - her latest Almond & Pear is going down a treat in her cafe!
