Intermediate off trail backpacking trip

Event number two will be a moderate difficulty trip, where we will hike about 7 miles each day. We'll meet at 9:30 to 9:45, and take off by 10:00 am. I'll be avoiding the steep hills, but will also not be staying on longer ridges or valleys unless terrain dictates. Expect some creek crossings, and climbing hills without a trail requires finding your own switchback or by just going straight up if you wish.
With these type of events, I always try to make sure the 2nd slowest hiker sets the pace. The slowest will be pushed a little out of their comfort zone, so don't leave me behind! The faster ones will have to stay reigned in somewhat or zig zag around to their own pace. That seems like the best compromise I've come up with over the years. I might also let some try their had at leading us with a map and compass if anyone desires, and pace will be just over a mph overall. 7 miles in 6 hours is the rough plan.
