Join two specialist tutors to learn both how to make kimchi and how to carve a green wood kimchi muddler (basher) in the beautiful Pengelli Nature Reserve. You'll take home the kimchi and the muddler you've made along with all the knowledge and skills to do it yourself
Kimchi is a fermented Korean food which is not only delicious but great for your health. It's a powerhouse of probiotics, supports digestion/your gut and has anti-inflammatory properties. Recent research suggests it may even be good for your mental health as we're starting to understand that the gut is the 'second brain'. It uses relatively simple ingredients, can be easily made at home once you've mastered the process and is tasty way to preserve locally available veggies! The knowledge and skills you'll learn are a fantastic introduction to preservation and fermentation so you'll be well equipped to expand your larder.
And what would kimchi making be without a beautiful hand carved muddler for bashing?! A muddler is used for packing the cabbage down into the container. We will take you through the theory and practical skills of carving this traditional tool. The materials/wood are sourced from the woodland in which we work and the workshop is held. This is also a great introduction to green woodworking and carving with lots of skills you can apply to other projects.
You'll learn the following:
Kimchi Making:
- Benefits of fermented foods for your gut and health.
- Benefits for the planet and soil health.
- Theory and process of making kimchi.
- Practical skills of making kimchi - you'll make a jar of kimchi you can take home with you.
- You'll also get a hand thrown kimchi weight as a gift.
Muddler Making:
- Theory - why we work with green wood, wood selection, history of the muddler/basher, tools and basic green woodworking theory.
- Practical skills to make a green wood muddler to take home with you.
- Basic green woodworking skills and techniques which can be transferred to other green woodwork projects.
- How to cleave.
- Carving skills to prepare materials and make the muddler.
- How to use a draw knife.
- How to make details and the finish with a carving knife.
ARE THERE ANY REQUIREMENTS?
- This is a beginner to intermediate session and no previous experience is necessary.
- Please wear sturdy outdoor shoes (you will walk through the woods to get to the workshop) and clothing you're happy to wear while handling wood and tools.
- Please bring a packed lunch and drinking water. You may also wish to bring a notebook and pen to take notes
ABOUT THE VENUE & PENGELLI FOREST: We have a beautiful timber framed workshop and covered outdoor work area nestled in Pengelli Forest. The woodland plots we coppice are just a 10 minute walk from the workshop.
Pengelli Forest is situated a few miles from the coast in Pembrokeshire Coast National Park and is a very special place. It is a 163 acre richly diverse ancient woodland, one of the largest of its type remaining in Wales. Some of the forest is thought to have been wooded since the end of the last Ice Age – 10,000 years ago! It is one of Wales’ National Nature Reserves and an important habitat for many species. It also has a long and deep history stretching centuries as a working woodland from a valuable resource for local people to timber for World War II.
