Jimmy Dunne's culinary journey began unexpectedly in 2012 when a last-minute call to fill in for an absent cook landed him behind the line at the restaurant where he worked front of house. That night ignited a passion that would forever change his path. Jimmy wasted no time working for chefs who inspired him. He spent 4 years honing his technique and deepening his love for local produce at 80 Thoreau in Concord, Massachusetts. Jimmy’s pursuits then took him to Sarma in Somerville, where he dove into a bold world of spices and imaginative Middle Eastern flavors and techniques. At Pammy’s, Jimmy has spent the last 7 years curating kitchen culture and doubling down on his unique culinary style. With a spirited appreciation for the essence of ingredients, he crafts dishes that are craveable and unassumingly refined. His expression is a heartfelt tribute to the art of cooking where timeless tradition meets playful innovation.
