Turning cabbage into a lacto-fermented preserve that has great health benefits.
Sauerkraut or choucroute, has become increasingly popular in recent times. It’s seen as a way to improve gut health, easing digestive symptoms and supporting your immune system by adding probiotics and enzymes to your diet. Before refrigeration the preparation of sauerkraut was a method of preserving cabbage for use, when other vegetables weren’t available, during the winter months – sometimes I think that we forget about this!
In this session you will learn how easy it is to make your own sauerkraut, preparing your own jar of sauerkraut to take home and nurture. When done, everyone will work together to prepare a number of dishes showcasing sauerkraut to be enjoyed as we sit, relax, eat and chat to finish off the session.
