Learn to make the most unusual pasta you've ever tasted! Mambricoli is a traditional semolina pasta from Apulia in Southern Italy, and quite specific to Lucera and "la provincia di Foggia," the Province of Foggia, which is the ancestral homeland of my maternal grandparents. This pasta requires four simple ingredients: semolina, eggs, grated cheese, and parsley.
Together as a class, we will each make our own dough and we will each shape our own mambricoli: so, the batch you make is the batch you will take home. And that evening, you can serve your homemade mambricoli in brodo (broth) or zuppa di pollo (chicken soup) or with a light marinara sauce. We'll send you home with our traditional family recipes for all these things, plus a recipe, of course, for mambricoli, so you can make this specialty at home whenever you like. This is simple, hearty peasant fare at its best.
Each participant will work at their own individual board around our communal table and while we work, we can share stories and gossip, too... which is just what my family does when we make mambricoli at home. Perhaps we can each have un bicchierino di vino, as well, to help pass the time.
Instructor John Cutrone is a writer and co-proprietor of Convivio Bookworks. He is the author of the Convivio Book of Days, a literary lifestyle blog encouraging us to live the ceremony of each day, and the Director of the Jaffe Center for Book Arts at Florida Atlantic University Libraries. He is a graduate of the MFA in the Book Arts Program at the University of Alabama. More importantly for this workshop, he's also pretty darn good in the kitchen.
