A deep dive into the world of flaky pie dough. Students will learn the technical foundations of pie dough through live demonstrations and hands-on practice, guiding them through the assembly of a beautiful, free-form Berry Rustic Galette.
What You Will Learn
- Flaky Dough Techniques: Understand the science of fat temperature and moisture control, learning how to achieve a marbled, "shingled" dough.
- Gluten Management: Master the delicate balance of hydrating flour without overworking it, ensuring a tender crust rather than a tough one.
- Berry Filling Dynamics: Learn how to balance the acidity and sweetness of seasonal berries, including the critical use of thickeners to prevent a "soggy bottom."
- The Rustic Fold: Practice professional hand-pleating techniques to create the signature galette border that holds in fruit juices while looking effortlessly artisanal.
Class Schedule
- Introduction (10 mins): Welcome, instructor introduction, and access to snacks and beverages.
- The Dough Demo & Mix (40 mins): A detailed demonstration of the dough-making process followed by student practice, focusing on fat integration and proper chilling techniques.
- Break & Galette Tasting (15 mins): Leg stretch and beverage refills at the refreshment station, tasting of a pre-made berry galette.
- Filling Preparation Demo (25 mins): A detailed demonstration of preparing a fresh berry filling, including a discussion about balancing sugar, spice, and thickeners (like cornstarch or tapioca) to prevent a runny tart.
- Shaping & Finishing (25 mins): Hands-on assembly where participants fill their galettes, apply an egg wash for a golden sheen, and finish with a sprinkle of coarse sugar.
Amenities Included
- Refreshments: Access to a snack counter including house-made non-alcoholic drinks, charcuterie and fruit skewers, a dessert, and a Keurig coffee station.
- Tools & Equipment: Class aprons and all necessary cooking tools needed to prepare this dish in class.
- Recipes: Every student receives the recipes used in class so this delicious dessert can be recreated at home.
Berry Galette: Each student will go home with their own galette that is ready to be baked (or frozen raw and baked later) at home.
