Home Cured Olives

This engaging class teaches participants the traditional methods of curing olives at home using both salt and lye techniques. Attendees are guided through the step-by-step process, starting with selecting the right variety of fresh olives and understanding their natural bitterness. The instructor explains how lye curing accelerates the debittering process and gives olives a smooth, mild flavor, while salt curing creates a more intense, wrinkled, and savory result. Each method is demonstrated with attention to safety, proper measurements, and timing. Participants gain hands-on experience preparing brine solutions, monitoring curing progress, and flavoring the finished olives with herbs, citrus, or garlic.
