Full Moon Miso Making Workshop and Lunch

This class is not in a car park. The address will be given when tickets purchased, but it is located conveniently on Godalming High Street.

Hi, I'm Jhenn! I'm a professional traditional Japanese washoku chef. Please join me to learn to make your very own miso. There's something that just feels right doing it on a full moon.

Miso is a Japanese ferment traditionally made with soybeans. You may have had it in miso soup or as a sweet glaze on aubergine called dengaku. Miso is a living food that your gut microbiome just loves and is a great healthy addition to your diet.

This is a small group workshop for only 4 people. Everything is included, but please bring a clean apron.

On the day:

• Welcome drink and chat.
• Make your own miso to take home (about 1kg; jar included).
• Miso tasting of different types and ages.
• Learn more about miso and koji, as well as recipes.
• Miso-themed lunch (menu below).
• Take home a printout of more miso science, how to store your miso, miso-based recipes from the lunch, and of course the homemade miso recipe to make at home for years to come!
  

Lunch around 1:30PM:

Dengaku Tofu: Tofu baked with sweet miso

Omakase: Yaki-wakame, miso-ae yasai, Japanese potato salad

Staples : Rice, seasonal miso soup and homemade tsukemono (pickles)

Dessert Miso caramel cheesecake

The best part is the whole class and lunch is plant-based and gluten free!
Not a gluten free kitchen. Other allergens will included soy and sesame, with others present in the kitchen. Please get in contact to see if we can accomodate!
