Course 1 – Antipasto
Crudo di Snapper
Local snapper crudo with sweet potato foam, citrus essence, and spicy crustacean oil.

Course 2 – Primo
Raviolo Doppio
A double-filled raviolo: one side with sweet pumpkin purée, the other with tangy goat’s milk ricotta,
finished with sage brown butter and amaretti cookie crumbles.

Course 3 – Primo Secondo
Risotto Cacio e Pepe al Tartufo Nero
Creamy Carnaroli risotto enriched with Pecorino Romano and black pepper, finished with fresh black truffle shavings.

Course 4 – Secondo
Filetto di Manzo al Rosmarino
Seared prime beef tenderloin, rosemary jus, wild mushrooms, crowned with a light Gorgonzola Dolce foam.

Course 5 – Dolce
Tartufo al Cioccolato Fondente
A dark chocolate mousse shaped like a truffle, revealing at its heart a white chocolate ganache infused with saffron, resting on a delicate sable.
