Class dates are:Wednesday, May 6thWednesday, May 27thWednesday, July 8thThe course will be led by our Wine Educator TJ Bertsch, along with our Head Winemaker Dave Mazzone and Assistant Winemaker Brandon Sanders. We will cover a variety of topics including sanitary practices, reputable sourcing, winemaking chemistry, fermentation, racking, clarifying, stabilizing, filtering, bottling, and defects. Each class will include hard-copy handouts so you can give it try at home!Class 1 (May 6th) will introduce you to key concepts such as sanitary practices, sourcing reputable equipment and juice, the winemaking process/ chemistry. We will get hands-on starting the fermentation process of our Sauvignon Blanc.Class 2 (May 27th) will show you the change from juice to wine. We'll practice “Racking” the wine and further delve into Stabilization and Clarification. We'll have an in-depth discussion about the Sauvignon Blanc grape history and varietal.Class 3 (July 8th) the final class will cover defects, common issues, and corrections.
