Bar Sotto invites you to Proof Is Overrated, a one-night-only NA pairing dinner featuring five courses and thoughtfully crafted non-alcoholic cocktails by Ryan Castelaz of Discourse Coffee & Agency MKE.


While this is not a formal brand partnership, Ryan is personally behind each drink—bringing his inventive, flavor-driven approach to the table. These NA pairings aren’t stand-ins or afterthoughts; they’re built to complement each dish with depth, balance, and intention.


From scallop with pear wood smoke to coffee panna cotta, every course is paired with a cocktail designed to elevate the experience—no alcohol required. Whether you’re sober-curious, taking a break, or just here for great food and drinks done differently, this dinner proves that proof is optional, flavor is not.
