Served with an olive oil & lemon dressed salad, baguettes with salt crystal butter

French chocolate cake served warm with thick cream or ice cream

What is Bakehouse style Cassoulet? When I was cooking in the Alps one of the dishes often requested was Cassoulet (and Tartiflette - we'll save that for ski night!). But it was hard to create this beautiful, rich time consuming dish within my seasonaires budget and for a crowd. So I created this version Cassoulet - it's a rich bean, poultry & pork stew slooow cooked with white wine and herbs. The lemon dressed salad cuts through the richness beautifully.
