If a home cook can take just one step to transform their cooking, it’s learning to use spices with confidence. At Milk Street, we believe there’s always more to learn about spices. In this hands-on class taught by Milk Street’s Associate Director of Education April Dodd, you’ll learn the techniques we turn to to maximize the flavor and aroma of spices day in and day out. We’ll put your tastebuds to the test and practice picking the right spice for the job as we make paprika-spiked chicken and orzo soup. You’ll bloom spices into brown butter and whip them into yogurt to bring new life to wintry roasted vegetables. And you’ll create a custom spice blend using our tried and tested rules, then use that blend to apply your own signature to a batch of spiced pepitas, making sure their flavor marries with a vinaigrette that studded with - you guessed it - spices. As we cook, smell, taste and blend, we’ll answer all your questions about sourcing, grinding and storing spices, plus how to pair spice-forward dishes with beverages.

About April: April Dodd is Milk Street’s Associate Director of Education. She began her culinary career at Middlebury College, where she managed the college's summer food preservation program. Since then, she has worked in an organic bakery in France; developed recipes for a cupcake shop; founded a culinary skills training program in Nairobi, Kenya; worked as a consultant to the UN Food and Agriculture Organization; and had a stint as the chef at a women-only retirement community in her hometown of Lexington, KY.

Is this an in-person event?

Yes. This event will take place in person at our location at 177 Milk Street in Boston. Expect plenty of hands-on cooking - not just a demonstration! If you are looking for a livestream cooking class, you can find our upcoming virtual class calendar here.

What are my transport/parking options getting to the event?

Parking garages:

  • Boston Harbor Garage (known as the Aquarium Garage)

The entrance to our school is directly across from 49 India Street. Our entrance doors have two bowties on them.

Is my registration ticket refundable?

No. We do not offer refunds for in-person registrations. However, your ticket is fully transferable to another person for this event on these dates. You are responsible for finding someone to use your ticket, arranging reimbursement, and for sending us the new attendee's full name, contact information, and any special dietary requests.

Is a meal included?

Yes. In addition to a snack midway through class, you will sit down to a full dinner, served family-style, at about 6:30 pm.

Are children allowed?

Children 11-17 are allowed to participate if they attend and cook with an adult parent or guardian. The minor and the adult must each have a ticket to the class.

How many people does one ticket cover?

One ticket covers one attendee.

You are welcome and encouraged to arrive up to 15 minutes before the event begins.
