A Foothills tradition returns—now held at the rooftop bar of Hell or High Water!
Our Butcher’s Table Dinner is a rugged-yet-refined communal dining experience celebrating whole-animal utilization, local, pasture-raised meats, and culinary craftsmanship. Enjoy house-made charcuterie and a rotating selection of dishes that highlight our collaborations with the incredible farmers of this region.
This isn’t just a meal—it’s a gathering that celebrates the full spectrum of what we do, from farm to butcher to kitchen. Foothills Culinary Director Eric Morris and butchers Meg Montgomery will guide guests through each course, sharing knowledge about the farms we partner with, their craft, and Foothills’ philosophy of whole-animal utilization, which underscores every dish we serve.
This intimate, family-style dinner is a chance to learn about the work of Foothills’ butchers and chefs, as well as the small local farmers with whom we partner, all while enjoying bold, creative, and unapologetically meaty dishes. Guests may also witness cooking demos on the rooftop catering grill, and farm partners are often invited to discuss their practices and products, bringing the story of whole-animal butchery to your plate.
While we do accommodate allergies, these are family-style meals that celebrate great local meat. No vegetarian or vegan substitutions will be available.
Our Evolution
Since its inception in 2014, Foothills’ Butcher’s Table Dinner has evolved from small, intimate dinners in our butcher bar to a bold, meaty showcase of our growth as a whole-animal butchery and culinary destination. Now held at Hell or High Water, these dinners showcase the complete ecosystem of the Foothills family of businesses and highlight the small farms that make our work possible.
