Summer Fun Mixer: Learn to Make Thai Summer Rolls (Gluten-Free, Vegan)

Join us for an afternoon of hands-on fun! We’ll learn how to make fresh, colorful Thai summer rolls—perfect for warm weather snacking. You’ll get to make your own rolls and take one home to enjoy later.
What to Bring:
A 10" plate
One of the ingredients listed below
A container to take home an extra roll
Ingredients (choose one to bring):
1½ cups finely peeled, shredded carrots
1½ cups finely chopped purple cabbage (use the soft leaves, not the tough stem)
2 avocados, sliced ¼" thick (drizzle with lemon juice to prevent browning)
1 cucumber, peeled, de-seeded and sliced ~¼" thick × 3" long
1 head iceberg lettuce, soaked overnight and drained the morning of class
1 branch basil from the garden (about 20 leaves) (Don’t buy—I have plenty)
1 bunch washed cilantro (no need to chop)
1 bunch scallions, washed, thinly sliced
1 small bunch of spearmint or peppermint from the garden (Don’t buy—I have plenty)
