Workshop Description:
Cold storage is essential for keeping harvests fresh, reducing waste, and supporting food security. In this workshop, we’ll visit two farms to see different systems in action: a traditional root cellar and a modern cooler built into a shipping container. These visits will give participants the chance to compare designs, ask questions, and see how cold storage fits into real farm operations.
Participants will learn the principles of cold storage and why temperature and humidity matter for different crops. We’ll cover common storage methods—from in-ground pits to cinder block rooms and container units—and explore key design features such as insulation, ventilation, shelving, and airflow management. Hands-on learning will include how to monitor and control conditions using thermometers, hygrometers, and data loggers, as well as how to maintain sanitation and food safety in storage areas. We’ll also discuss energy sources, efficiency, and how climate and location influence design choices.
Alongside technical skills, this session emphasizes observation, note-taking, and critical thinking. Participants will practice comparing systems, weighing costs and benefits, and problem-solving for efficiency and spoilage prevention. By the end, they will leave with a deeper understanding of how to plan, adapt, and maintain cold storage systems that support harvest quality, sustainability, and long-term farm success.
