Goat slow-cooked in Haitian epis & Dominican agrio atop a crispy rice cake, finished with pikliz crema.

🥩 Jamaica: Jerk Oxtail & Breadfruit Purée
Tender oxtail glazed with tamarind jerk jus, served over roasted breadfruit and topped with a thyme chip.

🐖 Puerto Rico: Crispy Pork Belly Mofongo & Sweet-Spicy Broth
Chicharrón on garlic mofongo with a sweet, spicy broth of ají dulce, honey, and chili — rich and balanced.
