- **Event Description**: Most foraged flavors only last a few weeks each year, and we’re going to explore the sweetest way to preserve them. Join us for a fun, flavorful class where you’ll learn how to preserve foraged ingredients by infusing them into mixtures of honey, sugar, vinegar, and maple syrup.

During the class, we will taste 5 different infused syrups made with locally foraged ingredients. You’ll leave with recipes as well as guidelines to start experimenting in your own kitchen. Get ready to start preserving the flavors of the wild!

Please note: this workshop focuses on infused syrups - we won’t be covering maple syrup production.

Our teacher Carolyn Dugas is founder of Fresh and Foraged, a bolete specialist, and avid community builder. An exceptional botany teacher, she also helps teach and coordinate events for the Vermont Mycological Society - including a number of events coming to the Upper Valley this year. Keep an eye out for mushroom ID walks this green season!
