What if some of the most delicious foods coming out of your garden each harvest were ending up in the compost pile alongside last month’s leftover kitchen scraps? Beyond the plant species growing at local farms and sold in produce sections at stores just like the Upper Valley Food Coop, many native and introduced species living wild in the neighborhood offer often-surprising utility - whether as tools like cordage or firestarters, dyes, chemicals and medicines. 

On Saturday, April 25th from 10-11:30am, some of these local edibles will be in the spotlight as Carolyn will be teaching the special class “Eat Your Weeds,” on the (native and non-native) plant species often discarded from farms and gardens despite their nutritional and culinary potential.

Eat Your Weeds will give you a refreshed perspective on a number of the familiar leaves, stems, flowers and roots that you encounter around your gardens, parks, fields and forests. Carolyn and her business Fresh and Foraged have developed and taught a number of different classes about plants and fungi, exploring a diverse list of culinary and artistic and other functional trains of thought. Plus, her work helping to lead the Vermont Mycological Society means she has a particularly interesting answer as to how mushrooms are different from plants!

Whether you are an avid gardener with years of success and experience, or a newly minted plant-enthusiast learning to identify species for a community science project like the Vermont Atlas of Life on iNaturalist, Carolyn is a teacher and community-builder we think you’ll be happy to know. Registration costs $30 for Fresh and Foraged educational offerings, so please send a note to Education@UpperValleyFood.Coop to get started.
