If you are passionate about barbecue and want to master the techniques used by top pitmasters and chefs, this intensive two-day BBQ bootcamp is for you. Hosted at Roots 657 in Leesburg, VA, this immersive program is led by Certified Master Chef Rich Rosendale and Chef Scott Poff, both of whom bring decades of experience in live-fire cooking, competition BBQ, and professional restaurant operations.

Chef Scott Poff trained at The Greenbrier and is a graduate of the prestigious Greenbrier Culinary Apprenticeship Program. What You'll Learn
This comprehensive BBQ bootcamp will take you through the science and technique behind low & slow cooking, smoke management, rubs, sauces, and modern BBQ presentations for catering and restaurants. Participants will work hands-on with a variety of smokers, including:

Big Green Egg
Steel drum cookers
Commercial smokers

Throughout the class, you’ll gain practical skills to perfect BBQ classics and explore modern plating and presentation techniques.
The menu includes:

Brisket – Learn trimming, seasoning, smoking, and slicing for competition-level results
Pork Shoulder – Master the techniques for juicy, flavorful pulled pork
Beef Ribs & St. Louis Ribs – Understand temperature control, smoke balance, and finishing techniques
Chicken – Explore different methods, including brining, smoking, and crisping
Smoked Turkey – Master brining and smoking techniques for holiday-worthy turkey
Sauces, Rubs & Sides – Develop balanced flavors that complement smoked meats

Professional Development and Certification
