- **Event Description**: This October, Union Øye is proud to welcome Brian to our kitchen for an extraordinary gastronomic weekend. For one weekend at the end of October, our conservatory becomes the stage for an intimate dining experience that belongs on every food lover's list.

October 30th
Our own executive head chef, Nicklas Skov, prepare his signature menu with a special twist for this food lover weekend.
Formerly sous chef at Dragsholm Slot in Denmark, Nicklas came to Union Øye for the valley and what it makes possible – menus built around foraged ingredients, preserved flavours, and the producers of our region. 

October 31th
A dining experience curated by Brian Mark Hansen, one of Denmark's most celebrated culinary careers, will be served in the Conservatory. In January 2023, in Lyon, he stood on the top step of the Bocuse d'Or podium. His winning menu, inspired by the fairy tales of Hans Christian Andersen, received unanimous approval from the jury – beating France on home soil.

For this weekend only, our sauna will be complimentary for our staying guests. To make sure that you will get the most out of your stay here, a three hour hike with a local guide for all levels, will be complimentary. Hike starts at 10:00 Saturday morning.
