In the morning session, participants will learn how to make rice koji, and in the afternoon, you will use the freshly made koji to craft your own miso.
The workshop will be led by Mr. Takanori Onishi, a Japanese fermentation advisor with extensive experience teaching workshops overseas. If you are interested in fermentation, don’t miss this unique opportunity.

① “Koji” Making Workshop
Learn how to make KOJI
In this workshop, you will learn how to make 麹 “koji.”

■ What is Koji?
Koji is a fermented product made by propagating koji mold on steamed rice, wheat, soybeans, or other grains. It is essential in Japanese fermentation culture and is used for making sake, miso, amazake, shio koji, soy sauce, vinegar, mirin, pickles, preserved foods, and other fermented products.
In other words, without koji, Japanese fermented foods cannot be made.
In this workshop, we will make rice koji, the most common and widely used type.

The aim is to help participants make koji easily at home using common kitchen tools—just like everyday cooking.

② “Miso” Making Workshop
Let’s make your own miso!
In this workshop, you will learn how to make 味噌 “miso.”

■ Do you know miso?
Miso is one of the most important traditional Japanese seasonings, cherished for centuries. Miso soup has become popular among people around the world—but do you know how miso is actually made?
This workshop is designed for those who want to craft their own miso. By participating, you will learn how to make miso easily at home and enjoy it at your daily meals.
Koji is essential for making miso. Without koji—made by inoculating steamed rice with koji mold—miso cannot be produced. While we sell koji at our shop, you also have the option to make it yourself.
If you are interested, you may join the separate koji-making workshop held on the same day from 10:00–12:00.

■ Purpose of this workshop
You will learn how to make your own original miso at home. We will use a standard miso recipe during the workshop, and we will also teach you how to calculate salt percentage and koji ratio. This will allow you to adjust saltiness or increase the koji content to create your own unique miso.
