Apps - a trio of Bajan classics

Fishcakes w Marie Rose sauce A Bajan street food staple. Light, crispy fritters of salt cod, potato and herbs, served with a creamy pink tomato mayonnaise topped with scallions

Pickled souse with spiced black pudding An island favourite and a Saturday social tradition. Pork, boiled until tender and then marinated in a "pickle" made from lime juice, diced cucumber, chopped onion, scotch bonnet pepper, and parsley. Served with a savoury sweet potato pudding seasoned with herbs and spices.

Coucou with brown butter gravy The national dish of Barbados, a savoury, polenta-like dish of cornmeal and chopped okra. Served with a rich brown gravy with the nutty notes of browned butter.

Smoked BBQ Chicken Tender, house-smoked chicken glazed in signature Bajan barbecue sauce, served with creamy macaroni pie and a refreshing breadfruit salad tossed in herbs, mayo, and island spices.

Rum & Coconut Bread Pudding Warm, spiced bread pudding infused with coconut milk and dark rum, finished with a bay-leaf glaze and topped with candied pineapple.

To add to the Caribbean party vibe, special guest Rum Shop TO will be running a Bajan rum cocktail bar featuring:

Sorrel Daiquiri A Caribbean classic with lime, sweet and Bajan rum

Rum Punch TO A Rum Shop TO rum punch twist with mango, pineapple, lime, sweet topped with bitters and nutmeg

A complementary welcome cocktail is included in with your ticket and there will be cash bar open throughout the event.

Reena Rampersad is a chef born in Canada and shaped by Trinidadian hands and hearts. With every dish, she honours the women who fed her — her mother, aunties, and grandmothers — staying connected to home, memory, and her Trini ancestry. @highsocietysupperclub

Chef Aiks is a Barbadian-born chef now based in Toronto, who brings the vibrant rhythms, flavours and warmth of Bajan street-food culture to the Canadian culinary scene. Ruby Sealy is an Event Producer, Mixologist, second generation Bajan Canadian, and graduate of George Brown College in Special Event Management. Through Rum Shop TO She shares her love for her ancestry by creating traditional and exclusive rum cocktails inspired by Rum Shops found all over the beautiful island of Barbados.
