Christian is a previous Masterchef: The Professionals Quarter Finalist, Michelin Chef and Master Forager. Based in The Stanmer Craft Museum in Stanmer Park and run courses, supply bespoke clients and consult on sustainable foraging.FLAVOUR FRED x URBAN FORAGEFred and I recently got together to talk about a couple of hands-on sessions with groups looking to learn about some of our favourite ways to find, cook and preserve some of the best flavours season by season. For 2026 we have 2 dates allocated for Wild Garlic (10th May 2026) & Mega Mushroom Special (27th September 2026) starting at 11am with a 3 hour flavour-led foraging walk followed by demonstrations (examples below) from us at 2pm including tips & tricks as well as some tasty food & drink throughout. Finishing at 4pm with a full follow-up provided of whats been seen and discussed.Wild Garlic 10th May 2026: Wild Garlic Capers, Wild Garlic Kimchi, Wild Garlic Aioli, Fermented Wild Garlic Sarmale along with various sauces, pickles and many other delights.Mega Mushroom Special 27th September 2026: All out fungi special witha fungi walk and wonderful selection of mushroom based dishes.
