At Bake Backwards, you begin by shaping and pre-shaping real dough — you feel the texture, learn the technique, and understand exactly where you're going — before we rewind together and build everything from scratch. By the time you mix your first dough, you already know what it needs to become. It changes everything. 

This is a private, cosy workshop hosted at Grazia's home in Zürich, for a maximum of 6 people. Small by design. Warm by nature. 

— What you'll experience —

A full hands-on session guiding you from shaping all the way back to building your dough from scratch. You'll meet Grannie — Grazia's beloved Lievito Madre, an Italian sourdough culture with a story of her own. You'll face all the challenges of home baking. And you won't leave empty-handed: you'll take home your own piece of Grannie to keep alive, plus a ready-to-bake dough to put in the oven the very next morning. 

Midway through the session, we pause for a relaxed Italian lunch break — a spread of artisan cheeses, seasonal vegetables and mezze, with soft drinks, coffee and tea. Because good bread deserves good company.
