What makes Volans truly unique is the blend of three distinct water sources used in production: deep well water from over 450 feet below ground, spring water from an artesian source high in the mountains, and rainwater collected during summer months. This gentle mix of mineral-rich and soft waters creates Volans' signature flavor profile. Crafted using a traditional 100% mechanical tahona process by master distiller Felipe Camarena, each batch honors centuries-old methods while delivering exceptional quality and taste.The doors open at 6pm and the seated dinner starts at 6:30pm.
