This class is all about the Durban favourites we grew up with and love, and learning how to prepare them in the easiest, most stress-free way possible. I’ll share all my hints, tips and shortcuts for creating delicious home-style meals without complicated methods or overwhelming recipes. On the menu is my signature Durban Lamb Curry, a dish that has been part of my home, my work and my store for years. Cooked on the bone with a carefully balanced blend of spices and finished with potatoes, it is one of my all-time favourite comfort foods.
We’ll also be making a Natal Prawn Breyani. It may sound complicated, but it’s surprisingly simple to prepare. Impressive enough for entertaining, special enough for family celebrations, yet easy enough to make on a weeknight.
Next is Chicken Kalya. Quick, easy and packed with flavour, it’s one of those dishes that comes together effortlessly but always feels special.  And because no Durban meal is complete without it, I’ll show you how to make soft, flaky rotis using my foolproof method. If roti-making has ever intimidated you, this class will change that.
Dessert: we have a true Durban favourite, Lamingtons. We’ll start with a buttery soft sponge, make a homemade chocolate syrup from scratch, and enjoy them warm after class. Trust me, they are phenomenal.
