While most people assume there is only one kind of Chorizo the truth is that Mexico is known for thousands of delicious and incredible chorizo recipes. In one town alone competing families will all claim to have the best chorizo in the world. And in a way they're all right. My family the Raygozas from Calera Zacatecas take great pride in our chorizos and are honored to know many Choriceros who have their own recipes and continue to educate people about our craft. It's so important that we continue these traditions and support Choriceros. So in advance I want to thank you for joining me on this Chori-Journey. I appreciate the support and love you've shown me over the years.Every student will be my apprentice for the night and learn how to make Zacatecano Pork Chorizo. From cutting the meat and grinding it to stuffing it into the casing and learning the traditional way of hand tying each link. You will learn it all! This class is very hands on and everyone will take turns learning this craft.To conclude the class we will sit around and enjoy a delicious dinner together to celebrate the lessons learned and the time shared. Each student will get to take home a pound of their freshly made chorizo as well as a gift bag full of Chori-Swag and goodies.
