Hands-on workshops processing poultry, covering (but not limited to)...
- Discussion on different species of poultry, the differences in commercial meatbirds vs heritage and how to prepare the meat accordingly.
- Beak-to-tail, ways to use the whole bird with zero waste.
- Setup, tools and pre-processing day prep.
- Clean, humane K*ll techniques.
- Plucking - ideal scald times/temps for quail, pheasant, turkey, chicken, duck and goose. Clean and efficient hand-plucking, machine plucking.
- Gutting/cleaning
- Resting and Brining 
- Portioning out

Get in quick as spaces are limited!
$120/per person. Refreshments provided.
ALOT of people are finding cost a barrier at the moment. Very hard times, so I'm happy to accept weekly or fortnightly installments if that's helpful.
