Home Grown: New South Wales

Our fourth and final Home Grown dinner, brings the vibrant flavours and culinary theatre of New South Wales to Rottnest Island.

The evening begins with a display of whole big-eyed tuna, carved live by Executive Chef Quim Hernandez and Prendiville Group Director of Food Russell Blaikie for the first course.

Succeeded by a menu showcasing the full spectrum of NSW’s culinary landscape:
- Sydney rock oysters
- Barramundi and blue swimmer crab ravioli
- Kangaroo and Guinness pot pie
- A reimagined classic lamington and more

Complemented by wines from a selection of wineries across the Hunter Valley.
