It originated in the Philippine military, where soldiers of all ranks ate together at one long table. The word “fight” refers to the fast, energetic way soldiers ate during their short breaks, symbolizing equality, teamwork, and camaraderie. Today, it represents unity, cultural tradition, and the joy of eating together. This demonstration-style class will showcase a variety of dishes including mango salad, Filipino adobo, pancit, and a Filipino version of stir-fried shrimp, all commonly enjoyed in this style of communal dining. Throughout the session, participants will receive detailed recipes, culinary insights, and practical tips as each dish is prepared and will have the opportunity to sample every item showcased during the class.

About the instructor:

Raven Glaiza Cruz is the owner of Maritela’s Filipino Cuisine. Her business is mainly focused on introducing and selling delicious Filipino food. She was fortunate to gain experience in the kitchen while growing up and has been cooking since she was seven. Bringing lifelong skills and authenticity to her business, she continues to experiment with different cuisines and incorporates them into dishes for family and friends to enjoy.
