As a part of Week 17, Dóra Svavarsdóttir, a chef and representative of Slow Food in Iceland, will discuss one of the biggest environmental issues of our time – food waste – and what we can all do as individuals to help reduce it.

The Slow Food organization is working with libraries to raise awareness about this important issue, as well as guiding us towards a more responsible and conscious food culture and future.

And yes – Dóra will bring taste samples!
Ingredients that “should have gone in the trash,” perhaps for something as small as being slightly bent or a little soft. Let’s rethink ingredients, how we use them, and why.
