In the Way of Tea

Tea has a rich history that can be traced back more than 1200 years ago. This is an introductory session to the beverage of tea that is consumed in different forms and cultures, and promises to be an eye-opening multi-sensory experience as we explore the traditional art form of tea appreciation. In this 5-week tea excellence programme, Ms Chen Shumin, a certified tea sommelier who represents Miss Tea Delight, will be here to guide participants on their personal journey of tea exploration.

Sessions 1 & 2

• Consumerism and bubble tea culture

• Learning all about the six broad categories of tea.

Sessions 3 & 4

• Tea and its origins in the Tang Dynasty

• Demonstration of the Song & Ming Dynasties tea preparation methods.

Sessions 5 & 6

• Tasting water and why this is greatly relevant

• 水为茶之母, the mastery of tea brewing begins with our understanding of water

• Taste different brands of water, then tell them apart at the end of the session.

Sessions 7 & 8

• How to smell and taste tea

• The importance and relevance of tea storage

• Tea leaf cultivars and their influence on taste.

Sessions 9 & 10

• Study the most prized tea cultivar from Taiwan and brew it

• Experience Cha Qi from the unique terroir of Lishan at 2080 metres above sea level

• Introduction to high mountain oolong teas from Taiwan’s top peaks.
