Much closer geographically to Champagne than the Côte de Beaune, its combination of cool-climate sites and Kimmeridgian soil produces a bright, racy quality of Chardonnay that is quite distinct from the more full-bodied- and expensive- versions produced in villages like Meursault, Puligny-Montrachet, and Chassagne-Montrachet. The wines of Chablis have long been loved for their almost bracing mixture of steely minerality, bright acid, and taut citric and orchard fruits, which makes them especially wonderful to pair with summer fare and seafood.
